Beginner’s Course in Herbs

– A Taste Experience

Discover the world of herbs with all your senses!


An inspiring and practical course for anyone who wants to learn the basics of herbs, understand their properties, and experience them through scent, taste, and observation. 


Duration: Half-day (including a short break, herbal tea, and snacks)

Group Size: 4–12 participants. For a personal and attentive experience.


For Whom: Beginners and tea lovers who want to live more in touch with nature and create their own herbal teas. No prior experience required.


Welcome & Introduction 

We begin the day with a warm welcome and a brief presentation of the course structure, content, and intention. Together, we settle into the day’s theme and create a safe and inspiring start. 


We discuss:


  • What herbal knowledge means and what it means to be a herbalist

  • What herbal medicine is and how it is used


1. The World of Herbs and Its Significance 

Why herbs? In a time of fast consumption and processed products, many long for a return to nature and what is authentic. Herbs give us both knowledge and experience – and can be used in food, tea, self-care, and overall well-being. 


We cover:


  • A brief look at the role of herbs in history and culture

  • Introduction to medicinal herbs and the difference between medicinal plants, culinary herbs, and edible plants

  • Why herbs are a perfect complement to conventional medicine


2. Tools and Safety

Before we start exploring the herbs, we go through:


  • Basic safety with plants

  • Hygiene and handling

  • Storage and shelf-life


3. Brief Introduction to Creating Your Own Materia Medica

What is a Materia Medica, and how do you document herbs to learn their properties? 


We teach you:


  • How to build your own “herb book” (Materia Medica) with notes on flavors, scents, and uses


Short Break Ritual (15–20 min) 


We enjoy herbal tea and snacks in calm presence, reflecting on the day’s impressions and taste experiences.


4. Brief Overview of the Body and Herbs

  • Active compounds and plant components

  • Herbs’ effects on body systems: digestive, nervous, and immune systems

  • Matching herbs to common ailments, e.g., sleep issues, digestive discomfort, or colds


5. Herbs in Practice – Meet Today’s Herbs 

We introduce today’s herbs, focusing on scent, appearance, taste, and properties. We have selected 12 Nordic herbs that grow freely or are easy to cultivate. Some are considered weeds, others are used as culinary spices. 


Examples of herbs:


  • Calendula – Calendula officinalis

  • Chamomile – Matricaria chamomilla

  • Cleavers – Galium aparine

  • Dandelion – Taraxacum officinale

  • Elderberry – Sambucus nigra

  • Lavender – Lavandula angustifolia

  • Lemon balm – Melissa officinalis

  • Nettle – Urtica dioica

  • Peppermint – Mentha × piperita

  • Rose – Rosa

  • Rosemary – Rosmarinus officinalis

  • Yarrow – Achillea millefolium


Taste and Experience Workshop:


  • Learn to make your first herbal tea and what is important to consider

  • The difference between decoction and infusion, as well as solar and lunar infusion

  • Feel, smell, and taste the herbs – use all your senses

  • Reflect on aroma, flavor, and possible uses

  • Discuss which herbs suit different needs and moods

  • Fill in your own experiences in your Materia Medica


6. Brief Overview of Wildcrafting and Sustainable Harvesting

  • Wild vs. cultivated herbs

  • Ethical wildcrafting and sustainable harvesting

  • Harvesting and drying plants

  • Storage of herbs


7. Brief Overview of Growing and Acquiring Herbs

  • How to grow herbs at home: in pots, on windowsills, or in the garden

  • Where to buy quality herbs

  • Book recommendations and resources for further learning


8. Closing & Knowledge to Take Home 

We summarize the day, reflect on what we take with us, and discuss challenges and opportunities to continue working with herbs in everyday life.

  • Materia Medica with notes

  • Printed course material with herb facts

  • Inspiration and knowledge to continue exploring the world of herbs at home

During the course, you will get to know 12 common Nordic herbs and discover how to prepare them as flavourful and nourishing herbal teas.


We alternate practical exercises with foundational knowledge about the history of herbs, sustainable harvesting and foraging, as well as how to best prepare, dry, and store your plants.


The course is held in small, personal groups with plenty of space for questions, presence, and creative joy. You will gain inspiration and confidence to continue using and appreciating herbs as a natural part of your daily life.
